In Minnesota we love a BBQ no matter the time of year (even in Winter, cuz we ARE that hard/crazy/bored) but Summer kicks ass for grilling every possible day you can.
I will and do grill/eat almost anything, although sometimes I just don?t want to eat meat, and sometimes I want something lighter than a big-ass meaty burger. This past weekend I did indeed want a big ass burger, but was in the mood for a change and wanted to save calories (yes, I wanted to have a drink)?I fell in love with the following meat-free Stuffed Portobello Burger recipe and had it two days in a fricken row!

Reasons portobello mushrooms rock. They?are not sissies, Jerk:

Minerals

Portobello mushroom?contain essential trace minerals including selenium, zinc and copper. Selenium functions as a coenzyme for some antioxidants and regulates thyroid hormones that contribute to regular development. Zinc plays a role in maintaining a healthy immune system, is essential for growth and helps regulate nerve impulses. Copper is part of many enzymes that facilitate energy production, iron metabolism, creation of connective tissue and healthy function of the brain and central nervous system. Portobello mushrooms are high in potassium and a source of manganese and iron.

Protein

Portobellos are a great low-calorie meat alternative. A 100-gram mushroom provides more than 3 grams of protein (you need this !), which contributes to muscle and tissue health, produces enzymes and hormones and helps transport the mushroom?s other nutrients around the body.

Calories

A grilled hamburger patty can have more than 235 calories and has saturated fat ? before the bun and condiments are added. However, a grilled portobello has around 30 calories and is also low in cholesterol and oil, which makes it a great alternative for healthy eaters that still want to eat a big ass grilled sandwich. Who you calling sissy ?

Stuffed Portobello Burger?

1/4 cup onions
1-2 tbsp balsamic vinegar ( I put this sh*t on everything)
2 portobello mushrooms
1/4 cup peppers (wish i had roasted peppers, and in that case use about an ounce or so I guess)
2-3 tbsp feta (original recipe used a slice of low fat mozzarella. Vegans can use Daiya cheese-that crap RULES http://www.daiyafoods.com/)
1 focaccia bun?(I indulged with this 180 calorie bun, and was glad because they get messy/sloppy and drip but you can use a Bread Flat or any Whole Grain bread/bun, but beware of the drip)
- napkins

Put balsamic, peppers and onion in a pan and cook on medium heat until translucent, about 4-5 minutes, then reduce to lowest heat, stirring occasionally while you grill the ?shrooms.

Preheat grill to medium, remove stems from mushrooms and brush with olive oil so they don?t stick to grill and a dash of S & P if you are so inclined.

Put shrooms on grill, stem side down for 6-7 minutes, then flip for another 4 minutes.

Top 1 mushroom with peppers, onions and cheese (I left some off to top off my burger at the end), then cover with the other mushroom, stem side down. Cook for about 2 minutes or until cheese has become ooey gooey goodness.

Slice your bun and toast it on the grill, then plop mushroom on your bun, top with with any remaining ingredients and shove it in your pie hole.

Added Yum Factors:

-I spread hummus on the bun one of the days for a change of flavor, the other day I used Grey Poupon. Use what you?d like, but be smart about it!
- Have vegetables with this sandwich. Go Greek by adding Feta!
- The original recipe also used grilled eggplant on this burger that they grilled each side for 2 minutes, but I don?t really like grilled eggplant and how in the hell would you fit that entire thing in your fricken mouth?

In nanotube growth, errors are not an option

At the right temperature, with the right catalyst, there's no reason a perfect single-walled carbon nanotube 50,000 times thinner than a human hair can't be grown a meter long.

That calculation is one result of a study by collaborators at Rice, Hong Kong Polytechnic and Tsinghua universities who explored the self-healing mechanism that could make such extraordinary growth possible. That's important to scientists who see high-quality carbon nanotubes as critical to advanced materials and, if they can be woven into long cables, power distribution over the grid of the future.

The report published online by Physical Review Letters is by Rice theoretical physicist Boris Yakobson; Feng Ding, an adjunct assistant professor at Rice and an assistant professor at Hong Kong Polytechnic; lead author Qinghong Yuan, a postdoctoral researcher at Hong Kong Polytechnic; and Zhiping Xu, a professor of engineering mechanics at Tsinghua and a former postdoctoral researcher at Rice.

They determined that iron is the best and quickest among common catalysts at healing topological defects ? rings with too many or too few atoms ? that inevitably bubble up during the formation of nanotubes and affect their valuable electronic and physical properties. The right combination of factors, primarily temperature, leads to kinetic healing in which carbon atoms gone astray are redirected to form the energetically favorable hexagons that make up nanotubes and their flat cousin, graphene. The team employed density functional theory to analyze the energies necessary for the transformation.

"It is surprising that the healing of all potential defects -- pentagons, heptagons and their pairs -- during carbon nanotube growth is quite easy," said Ding, who was a research scientist in Yakobson's Rice lab from 2005 to 2009. "Only less than one-10 billionth may survive an optimum condition of growth. The rate of defect healing is amazing. If we take hexagons as good guys and others as bad guys, there would be only one bad guy on Earth."

The energies associated with each carbon atom determine how it finds its place in the chicken-wire-like form of a nanotube, said Yakobson, Rice's Karl F. Hasselmann Chair in Engineering and a professor of materials science and mechanical engineering and of chemistry. But there has been a long debate among scientists over what actually happens at the interface between the catalyst and a growing tube.

"There have been two hypotheses," Yakobson said. "A popular one was that defects are being created quite frequently and get into the wall of the tube, but then later they anneal. There's some kind of fixing process. Another hypothesis is that they basically don't form at all, which sounds quite unreasonable.

"This was all just talk; there was no quantitative analysis. And that's where this work makes an important contribution. It evaluates quantitatively, based on state-of-the-art computations, specifically how fast this annealing can take place, depending on location," he said.

A nanotube grows in a furnace as carbon atoms are added, one by one, at the catalyst. It's like building the peak of a skyscraper first and adding bricks to the bottom. But because those bricks are being added at a furious rate ? millions in a matter of minutes ? mistakes can happen, altering the structure.

In theory, if one ring has five or seven atoms instead of six, it would skew the way all subsequent atoms in the chain orient themselves; an isolated pentagon would turn the nanotube into a cone, and a heptagon would turn it into a horn, Yakobson said.

But calculations also showed such isolated defects cannot exist in a nanotube wall; they would always appear in 5/7 pairs. That makes a quick fix easier: If one atom can be prompted to move from the heptagon to the pentagon, both rings come up sixes.

The researchers found that very transition happens best when carbon nanotubes are grown at temperatures around 930 kelvins (1,214 degrees Fahrenheit). That is the optimum for healing with an iron catalyst, which the researchers found has the lowest energy barrier and reaction energy among the three common catalysts considered, including nickel and cobalt.

Once a 5/7 forms at the interface between the catalyst and the growing nanotube, healing must happen very quickly. The further new atoms push the defect into the nanotube wall, the less likely it is to be healed, they determined; more than four atoms away from the catalyst, the defect is locked in.

Tight control of the conditions under which nanotubes grow can help them self-correct on the fly. Errors in atom placement are caught and fixed in a fraction of a millisecond, before they become part of the nanotube wall.

The researchers also determined through simulations that the slower the growth, the longer a perfect nanotube could be. A nanotube growing about 1 micrometer a second at 700 kelvins could potentially reach the meter milestone, they found.

Microsoft's own advertising blog (yes, it exists) has revealed how its going to frame ads inside incoming Metro-themed apps. While announcing partnerships with six different ad design teams, Microsoft threw up an example, above, that ties together a Seattle Sounders FC app with a panel showing off a pair of Adidas' latest Predator cleats. The adis located at the far edge of the apparently scroll-able app and clicking / tapping on the side will launch into a dedicated page, with a back button visibly ready to swing you back. While it looks relatively unobtrusive at the moment, the background of the app will also be up for advertising grabs, able to integrate videos, text and other media. Let's hope it doesn't ruin those delicate Metro lines when Windows 8 finally arrives.

In the interest of full disclosure, I?m writing this post as I eat a chocolate chip cookie brought in by one of the lovely and talented Forbes producers. I like to call this ?reporting from the trenches."

(Of sedentary employees who are getting fatter by the minute, that is).

This week, job-hunting hub CareerBuilder.com released the results of a survey that tells us 44 percent of American workers have gained weight at their current job. Twenty-six percent gained more than 10 pounds and 14 percent gained a whopping 20.

Surveys like this one hit me particularly hard lately ? most specifically because I sat through all four hours of HBO?s ?Weight of The Nation? and am seriously concerned. Did you see those fatty livers? Did you?
But enough preaching. Since technology allows us to do our jobs, talk to colleagues and attend meetings without ever leaving our desks, and the average American works more than 47 hours a week, it?s no wonder only 18 percent of adults get the total amount of physical activity recommended for good health. Most of us rarely get out heart rates up outside of work either ? we commute in our cars, on trains or subways, and when we return home tend to seek out the couch straight away. In fact, nearly 40 percent of us get no physical activity at all.

To be fair, I do get some. But as a web reporter, meaning I spend nine hours of my day in an office talking on the phone and exercising my finger muscles tap-tap-tapping away on my keyboard, I can commiserate with the under-developed muscles of most of America. Lucky for me I don?t earn a paycheck in one of the fattest professions revealed this week.

That?s right, according to CareerBuilder, there are certain occupations that had a higher incidence of workers reporting a significant weight gain, which the experts say are tied both to sedentary work environments and highly stressful positions. More than half of the employees who gained weight blamed it on sitting at their desks for the entire day, up to and including their lunch hour (guilty as charged).

Here are the 10 jobs where employees are most likely to gain weight:

  • Travel agent
  • Attorney/judge
  • Social worker
  • Teacher
  • Artist/designer/architect
  • Administrative assistant
  • Physician
  • Protective services (police, firefighter)
  • Marketing/public relations professional
  • Information technology professional

Other scapegoats for weight gain on the job (besides sitting on our butts all day) are stress (37 percent said they gained weight because of stress), eating out with coworkers/clients (23 percent), workplace celebrations (18 percent) and the pressure to eat the delicious treats their coworkers bring into the office (10 percent ? damn you and your cookies).

Of course, your employer (or profession of choice) isn?t entirely to blame for those extra pounds. According to CareerBuilder, more and more companies are doing their part to implement healthy living and fitness initiatives. ?Twenty-nine percent of companies provide gym passes, workout facilities or wellness benefits for their employees,? says CarrerBuilder?s VP of human resources Rosemary Haefner. ?But only 10 percent of workers say they take advantage of the benefit.?

Meaning it?s more about you than your career. Over on Jezebel, Cassie Murdoch looks at the flip side of the ?oh my god we need to exercise more? conversation, citing another recent survey:

Either way, looking at this week?s list of professions in which employees should be even more on guard for weight gain than others, I was really struck by one thing: No one is safe. Reporters aren?t on this list but I?m not mounting my high horse on this one. If firefighters are gaining weight saving lives, my waist is growing with every keystroke.

A gentle film can still be searing in its effect on an audience, something that "Monsieur Lazhar" proves emphatically.

With a few folds, this story could have made a script for John Barrymore, like Topaze, or for Chaplin.

A sad, reflective study of the possibilities, and the impossibilities, inherent in the teacher-student relationship.

"Monsieur Lazhar" is good. Really good.

The film is rich in naturalistic, tossed-off details.

A standard liberal tale about an inspirational teacher gradually deepens into a quiet study of how grief works its way through a community.

Falardeau's adaptation of fellow Qu?b?cois Evelyne de la Cheneli?re's play honours the power of the written word (a motif reinforced throughout the film), and expands on its stage origins via remarkably-assured cinematic touches.

Falardeau dances delicately along the razor's edge of the familiar and the conventional. But he does so with tact and taste and just the right blend of tension and relief.

This moving film features exquisite performances by Fellag and a stunning ensemble of child actors. The movie also gets high marks in cinematography, sound, original musical score and editing.

Although it raises timeless questions about life and loss, and timely ones about mentorship and multiculturalism, "Monsieur Lazhar" would rather teach than preach.

... the perfect school drama for people who hate the Hollywood version of the genre, but are open to simple and moving stories about people doing the best they can in a world that doesn't always seem to encourage that approach.

A humanistic story about how tragedy has different effects on people.

a naturalistic ensemble drama about the possibilities - and the limitations - of the teacher-pupil relationship ... probably too low-key for mainstream multiplex tastes, Monsieur Lazhar is a temperate, generous and deeply affecting experience.

As the teacher, Fellag suggests Robert Downey Jr. channeling a quietly reflective Robert De Niro.

This is a good movie about teaching, but more importantly, a good movie about the loss of a loved one and how to cope with death.

There's a lighthearted inspiration infused throughout Monsieur Lazhar that makes it also touching, but never maudlin.

Everything about the film sets exactly the right tone, from the unforced and winning performances by the main children to the wintry cinematography to Fellag's quietly rueful performance.

The rare sort of movie that chooses not to focus on the dramatic, pivotal moments that happen in life, but what comes after.

One of the most touching films of the year. A brilliant tragedy that transcends boundaries of age, country, race, religion and gender.

tender and sincere, frequently striking a fine balance between the dictates of the "inspirational teacher" genre and a more mundane kind of realism that tamps down easy sentimentality and strives for something more organic and genuine

Takes the fairly dreadful 'teacher who makes a difference' sub-genre and puts an interesting new spin on it that gives it the allure of something fresh.

Some teachers will learn from it. All teachers will find it a reaffirmation of their vocation.

Impressively directed and superbly written, this is an emotionally engaging, deservedly Oscar-nominated drama with a terrific central performance from Mohamed Sa?d Fellag.
